Professions charge two different currencies depending on the kind. A gathering profession is mostly hours on a route, so the cost is pure time. A crafting profession is hours plus materials, so the cost is time and gold — every skill point burns through mats you either farmed or bought. That second case is where a carry saves the most: the route already knows which craft gives points at which skill level, which materials it needs, and where they come from, so nothing is wasted walking the wrong way or crafting the wrong item.

Because a gathering skill and the craft that uses it share the same materials, leveling them together — Herbalism with Alchemy, Mining with Blacksmithing, Skinning with Leatherworking — is often the efficient move, since the gather feeds the craft on a single route.
Yes, and both kinds pay off. Crafting professions make gear, consumables, enchants, and bags you'd otherwise buy at a high price, and some crafted pieces hold a raid-set slot for a long time. Gathering professions feed those crafts and sell well, funding the rest of your character. The best pairs are the obvious ones: Herbalism with Alchemy, Mining with Blacksmithing or Engineering, Skinning with Leatherworking.
Two primary professions at any time, in any combination — two crafts, two gathering skills, or one of each. Secondary professions have no limit: Cooking, Fishing, and First Aid can all sit on the same character. Changing a primary profession is possible, but the old one drops to zero and everything spent on it is gone, so the choice matters more than it looks.
